Brix Distillers in Sydney was established in 2017 by a trio of individuals who recognized that the true essence of Australian rum was not being adequately portrayed. Motivated by this realization, they embarked on a mission to rectify the situation and bring about positive change.
Employing a meticulous small-batch production process, Brix takes pride in using only the finest ingredients, sourced locally or derived from native sources whenever feasible. Artificial flavors and colors have no place in their craft, as they prioritize authenticity and quality. The result is a range of rum offerings that boast intricately layered flavors, owing to the use of premium barrels.
The premises of Brix Distillers reside in a space formerly employed for storage purposes by St Mary’s Cathedral. The ambiance exudes warmth, modernity, and an industrial charm. Notable features include a 1200-litre copper still, eight 1000-litre fermentation tanks, and ample polished concrete surfaces.
In addition to its own distinguished assortment, Brix takes pride in showcasing a vast ‘rum wall’ adorned with over 150 varieties from around the globe. Moreover, an assortment of Australian wines, local spirits, and craft beer are also available to cater to diverse preferences.
Visitors have the opportunity to witness the distillation process firsthand from the open bar on the ground floor or the intimate barrelling room located on the mezzanine level.

While Brix does not operate as a full-fledged restaurant, it offers an array of delectable food options that simply cannot be missed.
