Terra Australis Distillery is centered around the enigmatic Great South Land, referred to as “The Southern Land of the Holy Spirit” by ancient Spaniards. Situated on the outskirts of the charming township of Daylesford, at the entrance of this delightful community lies the Old Butter Factory. This venerable and dignified historical structure has been transformed into the cherished abode of Terra Australis Distillery.

Upon arrival at the estate, visitors are welcomed by a flourishing garden adorned with elegant trees, and a verdant carpet of green leading to the front entrance. Well-defined pathways provide guidance, while ample parking accommodates individuals, groups, and coaches.

Terra Australis is dedicated to the creation of pure, exquisite spirits, meticulously blended with rare and exceptional botanicals. This forms the foundation of our distinctive gin range, renowned for its remarkable smoothness, richness, and flavorful profile.
