Starward Whisky

Australian whisky matured in red wine barrels. What whisky can be.

In 2007 founder David Vitale set out to produce a modern Australian whisky. He wanted his whisky to be affordable and suitable for serving neat or as a cocktail with food and Starward Whisky was born.

Starward chose Australian malted barley, fermented with brewers’ yeast for Nova and Solera because of the tropical fruit character it gives to our whisky. Then for Two-Fold, wheat’s dry, aromatic character offered perfect balance.

They source every ingredient from just a day’s drive away. By working closely with growers, winemakers, farmers, traders and maltsters we keep an eye on new varieties to make sure Starward produce is the best quality produce possible.

Then carefully select barrels from nearby wineries for a minimal intervention approach. As it’s a quick turnaround between barrels being disgorged then filled with our whisky, barrels only need a quick cleansing blast of steam or light char before being filled with spirit.

All of this has created a whisky brand which collects award, after award, after award. At the San Fransico world spirits awards, Staward took home 22 double golds and 3 golds in 2022.

Their distillery in Port Melbourne is a fantastic location only minutes from the CBD, where you can sit down and enjoy the latest drinks & food menu which takes seasonal inspiration to create a ever-changing list of cocktails and small delights to pair perfectly with your whisky.

There is not just one way to enjoy whisky and Starward are big champions for finding fun new ways to taste and experience. Like their whiskies, there is a tour, masterclass or tasting which has the Starward stamp, yet each differs and offers something new.
