The Team at four pillars gin have been teasing a new release over the past few weeks and we now have it the Olive Leaf Gin. This description of the new release comes from the four pillars team:
“Olive Leaf Gin is our new savoury gin, five delicious years in the making. It’s textural, bright and perfect for a Martini or Gintonic. We’ve used three types of cold-pressed extra virgin olive oil and olive leaf tea from the world-class groves of Victoria’s Cobram Estate. Botanicals like rosemary and bay leaf transport you to the Mediterranean (even though they’re from Cam’s garden), while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.”
The gin is built on the back of the following list of botanicals:

- Bay Leaf
- Olive Oil
- Macadamia Nut
- Rosemary
- Grapefruit
- Juniper
- Lemon Myrtle
- Coriander
- Lavender
- Orris Root
The founding story for this gin goes like this.
“The genesis of this gin was back in 2015 when we distilled a little drop called Cousin Vera’s Gin. Made with our friends at Santamanía Destileria Urbana in Madrid, this was the first gin in our Distiller Series.
It was also was our first foray into savoury, Mediterranean-inspired gin flavours using fresh olives and rosemary. Cousin Vera’s Gin came and went pretty quickly, but remains a cult classic in the Four Pillars canon for those who crave that savoury style.
After that collaboration, we knew gin and olives would combine beautifully and a trip to the olive groves of northern Victoria confirmed it for us.
It was after visiting Cobram Estate in Boundary Bend during olive harvest that we realised olive oil could be a brilliant botanical alongside dried olive leaves.
The aroma, flavour and texture of fresh olive is stunning, so we did an entire year of trials before finalising the recipe. The result is a completely delicious, savoury and bright gin.”
At The Spirit Trail we are very excited to try this gin. One suggest way by Four Pillars is the Olive Leaf Gin mixed with Strangelove’s Dirty Tonic and garnished with orange slices and two Sicilian olives.
